I find it remarkable, having never met her, that Erma and I are so similar when it comes to our carpe diem philosophies – particularly when it applies to food. I feel pretty confident in suggesting that if Erma dined with me at Pax Americana (aka Pax), she’d eat there as often as I do. You see, Pax rotates their menu selections seasonally, so if you don’t make a reservation today, the menu (quite literally) could be gone tomorrow. If you’re looking for a ‘must-try’ restaurant in Houston and haven’t dined at Pax yet, you’re sorely missing out!

44 Farms Beef Carpaccio

New drinks, new appetizers, new entrees, and new desserts await the discerning palate each quarter utilizing as many local ingredients, farmers, and ranchers as Pax can stuff into the menu. Your eyes have a veritable feast of flavor profiles to savor and any time I’ve asked our wait staff what they recommend they can hardly pick a favorite that visit, and this fall’s menu is no different.

As you enter Pax Americana, the first thing you notice is how modern and chic the restaurant is, but also how inviting. Warm wood accents play off the cool neutrals of the walls and plates as your eyes scan the bar to your left and the open kitchen at the back. Quaint and cozy is absolutely how you’d describe the ambiance, and it’s part of the charm that lures me back. If you’re a cocktail connoisseur, too, then you’ll appreciate Pax’s refined cocktail menu. For those of us that prefer a good beer or wine, there’s also a robust selection for you to peruse and select from. However, one of my favorite things to do is tell the bartenders that I like my drinks “fruity and rum-my” and have them create a new concoction for me each visit. In my opinion, impromptu creation is the definition of true artisanship, and I haven’t been disappointed with any cocktail at Pax yet!

Manhattan Project #5

This fall menu I’ve noshed on: Pimento Fries, Butternut Squash, Beef Carpaccio, Braised Pork Shank, Slow Cooked Beef Brisket, and Grilled Octopus. If you’re wondering which of these you absolutely can’t miss, I’d run back for the Pimento Fries and the Slow Cooked Beef Brisket in a heartbeat. What is it about perfectly executed pimento cheese that leaves you wanting more? Pax’s rendition of dreamy cheese with the bite of pimentos smothered over perfectly crisp fries is comfort food at its ultimate core. And, come on, it’s the South – if you’ve got a well-cooked brisket, I’m going to devour it in four seconds and hold myself back from licking the plate.

Grilled Octopus

The staff at Pax Americana are always so gracious and at the top of their game – from servers and bartenders, to managers and kitchen staff.
